Pumpkin Spice Keto Donuts

Yield: 10 donuts

Sugar free, Gluten free and dairy free!

Ingredients
2 eggs
2 tablespoons non-dairy milk, unsweetened
3 tablespoons pumpkin puree
¼ cup avocado oil
1 teaspoon vanilla
2 cups almond flour
¼ cup monkfruit sugar
1 teaspoon baking powder
¼ teaspoon cinnamon
¼ teaspoon cloves
¼ teaspoon ground ginger
¼ teaspoon allspice
1/8 teaspoon salt

Pumpkin Spice Glaze
1 cup monkfruit powdered sugar
2 tablespoons pumpkin puree
1 tablespoon non-dairy milk, unsweetened
pinch of salt
pinch of cinnamon
pinch of cloves

PREPARATION

  1. Whisk together eggs, milk, pumpkin puree, oil and vanilla in a medium bowl. Set aside.

  2. Mix together almond flour, monkfruit, baking powder, spices and salt.

  3. Combine wet ingredients with dry ingredients and whisk until fully mixed.

  4. Pipe into a greased donut pan.

  5. Bake at 350 F for 18-20 minutes.

  6. Cool for 30 minutes and remove from pan and set aside.

  7. Whisk all glaze ingredients together in a small bowl, adding more milk if needed to thin it out. Dip each cooled donut in the glaze and serve!
